1. Chili
The cool thing about this is that chili can be altered to fit whatever you have on hand. So there is a basic style, which is quicker and only has a few ingredients, the other is deluxe. The thing I like to do is make a big batch, (make it spicy!), and then freeze it in old cottage cheese containers. Then I have my perfect serving size and it is ready to go, no mess, no fuss, just a healthy quick and delicious meal. Chili can also be made with or without meat. I usually will use ground turkey, but you may also use ground beef or chunked up chicken breasts. Fresh vegetables and ingredients can always be subbed for canned goods.
Simple Chili:
0.5-1.0 lb meat
0.5-1 onion
1 can tomato sauce
1 can diced tomatoes
1 can black beans
1 can pinto beans
1 T chili powder
salt and pepper to taste
Brown onion and meat together, then add to pot with other ingredients. Bring to a boil, and then simmer until ready to eat.
Awesome Chili:
1-2 lb meat
1 onion
3 garlic cloves
1-3 bell peppers (use the red or orange for more color and added flavor)
2-4 jalapeños
1-5 any other peppers you can find (the more the merrier)
2 cans diced tomatoes
1-2 cans tomato sauce
4 cans of beans, use any combination of the following: black, pinto, white, garbanzo, red, or kidney
2-4 T chili powder
salt and pepper to taste
Brown peppers, onion, and meat together. Then add everything else to the pot. Don't drain the juice from the cans, add everything to the pot. Bring to a boil, simmer until ready to eat or store. Stir regularly.
2. Use your extra grilled chicken for a salad:
-When you grill your chicken for dinner, throw on another breast for the following lunch.
-Cut the chicken up into pieces and add to salad greens, throw in some fruit, like an orange, mango or peach. Add in as many extra fresh vegetables as you like. Then chill it unit it's time for lunch. The juices from the grilled chicken and fresh fruit take the place of your dressing which eliminates the extra calories. I like to add fresh ground black pepper to mine for extra flavor. You can also add grated Parmesan cheese.
