Granola


Granola
42 oz whole grain oatmeal, not quick oats (about 12-14 c)
14 oz coconut flakes, unsweetened
1 tsp salt
1-2 c your choice of chopped or sliced nuts (optional)
1-1½ c apple sauce
3 T vanilla
1 tsp almond extract (optional)
1 c water
3/4 - 1 c honey
Mix all dry ingredients. Mix wet ingredients. Mix both wet and dry ingredients together in larger mixing bowl (it will mix easier if you microwave wet ingredients for a couple of minutes first.) Bake at 250 for 2 hours stirring every 30 minutes.  Add your choice of dried fruit.
