-Whole wheat pita
-jar of spaghetti sauce
-toppings
-grilled chicken
-peppers (green or red)
-jalapenos
-onion
-mozerella cheese
-fresh spinach
-pineapple
-tomatoes
-mushrooms
-etc. (get creative with toppings, but try to keep them healthy--so no peperoni or sausage!)
Preheat oven to 400. Place aluminum foil on cookie sheet. Simply place pita on cookie sheet, put a little sauce on top and whatever other toppings you want. Place in oven for about 7 minutes, just long enough for the cheese to melt and pizza to get warm.
These are super easy, delicious, and also very easy for portion control. One pita is the perfect amount for one person. (For our kids often we'll just cut one in half, on rare days they might eat a little over half of a pizza pita.) These are fun because you can get creative with your toppings (the ones listed are good suggestions, you obviously can use as few or as many as you want). We will put all the different toppings in bowls on the table and everyone makes their own. It's fun to get the kids involved and they are more willing to try new things if they put it on their pizza themselves! Spaghetti sauce can be re-used, just keep jar in the fridge. Lots of times we'll use canned pineapple or just throw some chicken on a foreman grill when we're in a hurry.
