*Here is one that is for dinner (takes longer to cook), it needs to be warm, but it is really good.*
0.5-1 lb. lean ground meat
1 can crushed tomatoes
olive oil
mozzarella cheese cut into 1/2 inch cubes
1/2 c fresh parsley
2 eggs
1 onion chopped
4 cloves garlic minced
salt and pepper
Mix meat, parsley, 1/2 of the onion and garlic, eggs and salt and pepper together. Make meat balls (any size) from the mixture around the cheese cubes. Brown the meat balls in a tiny bit of olive oil, over medium heat until seared. After the balls are cooked, drain off any grease, then add the leftover onion, garlic and tomatoes. Cook on low heat for 20-60 min. Enjoy!
